Beanless Keto Chili

This quick and easy chili is the perfect keto meal. It is filling and savory, and you won't even miss the beans! With only 7 grams of net carbs per serving, it is great for the keto diet.

Makes 7 Servings with 48.5 total net carbs (or 7 net carbs/serving).

Ingredients:

​

  • 2 Lbs Ground Beef (80/20)

​

  • 1 - 14.5 oz can of fire roasted diced tomatoes

​

  • 1/4 Cup Tomato Paste

​

  • 1 cup diced yellow onions

​

  • 1 cup diced green peppers

​

  • 1/4 cup diced jalapenos (about 1 medium pepper seeded and veins removed)

​

  • 2 1/2 cups Beef Stock

​

  • 2 tbsp Hot Mexican Chili Powder

​

  • 2 tsp cumin

​

  • 2 tsp salt

​

  • 1 tsp pepper

​

  • 1/2 tsp cayenne

​

  • 1/8 tsp cinnamon (optional)

​

  • 1/8 tsp ground coriander (optional)

​

  • 2 tsp garlic powder

​

  • 2 tsp paprika

​

  • 2 Bay Leaves

​

  • 2 tsp olive oil

​

Extras:

​

  • Shredded Sharp Cheddar

​

  • Sour Cream

​

  • Chives

​

Cooking:

​

  • In a large 4-quart pot, start by adding olive oil and bringing to medium high heat. Saute the onions, green peppers, and jalapenos for 4-5 minutes or until translucent.

​

  • Add the ground beef and brown, approx. 8-10 minutes, stirring regularly to break up the beef. Remove the beef mixture from the pan and drain excess oil.

​

  • Return beef to the pan and add spices and beef stock, tomatoes, and tomato paste and stir well to combine.

​

  • Add the bay leaves.

​

  • Bring to a boil, then reduce to a simmer. Cover and simmer for at least 1 hour before serving.

​

  • Serve and top with cheese, sour cream, and chives (if you like them).

​

Helpful Tips:

​

  • This a great recipe for an InstaPot or even a slow cooker.​​

​

  • For an InstaPot, set to saute while cooking the onions and browning the meat. Drain excess oil, add remaining ingredients, and set to Stew/Soup for 35 minutes. Let the steam naturally release and enjoy!

​

  • For a slow cooker, cook on high, for 2 hours after sauteing the onions and browning the meat. It is still important to drain excess fat before adding the spices and additional ingredients.
